INDIVIDUAL BERRY CHEESECAKE TRIFLES

These Berry Cheesecake Trifles are one of my favorites during the summer. They are such a magical combination of berries and cheesecake mixed in with a simple vanilla cake. They’re just the kind of cool, creamy, make-ahead dessert that summer gatherings demand.

The cake is a nicely sturdy one that will hold up to all that cheesecake and all those berries on top without getting soggy. It’s actually a scaled down pound cake recipe that I use as a base for another summer favorite, Strawberry Shortcake Cheesecake Bars. If you prefer or if you’re short on time, you can use a store-bought pound cake.

When it’s time to assemble these trifles, I like to cut a round of cake to fit each glass so there’s a nice solid layer in the bottom. I cube the rest of the cake for the next layer of cake, but you can cube all of the cake if you like. The layering begins with the cheesecake filling and berries. The number of layers you’ll need may vary depending on what serving glasses you’re using. The ones pictured here are mini trifle bowls. I like them for these trifles because of their straight sides and footed bottom. They really show off all those layers!

As for the berries, use any that you like. Stick with one kind or use a few. I often have a variety on-hand, so I usually go with mixed berries. Or how about mixing them up with a different single kind of berry in your trifles? Then you can offer a variety to your guests!

I think berries and cheesecake were made for each other, and these beauties are no exception. The cheesecake filling is a simple no-bake one with a hint of lemon flavor to complement all those berries. I could 100% just eat that as my dessert and be quite happy. Add in the cake and berries, and I’m positively giddy.

You’ll need to chill these trifles for a bit before serving. That makes them a perfect make-ahead treat. I usually chill them overnight fully assembled. Make sure your berries are well dried after rinsing to prevent the colors bleeding into the topping. To be safe, you can wait to add those last berries until time to serve.

COMMON COOKIE PROBLEMS AND HOW TO PREVENT THEM

We all love freshly baked homemade cookies, but sometimes things don’t quite go as we envisioned them. There are a lot of little things that can go wrong to make your cookies less than perfect Hong Kong work visa.

GREEN CHILE AND CHICKEN DOUGHNUTS

Ever since I started telling people that I was going to write a cookbook on doughnuts, I’ve gotten questions about whether it was going to include any savory recipes. Like me, many of you out there love your doughnuts, but also tend to crave salty over sweet. I’ve been promising some savory doughnut recipes ever since, and I must say, I wish I had gotten around to it much, much sooner virtual office in hong kong.

Since I basically started my whole doughnut obsession around Cinco de Mayo with margarita doughnuts, what better way to jump into savory doughnuts than this: green chile and chicken doughnuts! Oh, sure, it’s more of a New Mexican flavor combination than a true Mexican one, but then again, it seems that it is the US that has turned the 5th of May into a new reason to party. And really, can you ever go wrong with green chile good hk serviced apartment?

You can do these doughnuts a couple of ways. If you want easy, just make raised doughnuts as usual (either with one of the recipes in Doughnuts or one of the ones on the site), but use 1/2 of the sugar and twice the salt. I subbed in 25% whole wheat flour in these, and loved it. Cut them out as doughnuts (they’ll just fry easier that way!) And then, load up a couple with warmed up green chile with shredded chicken, a little diced onion, maybe some cilantro, definitely a fried egg, a sprinkle of cojita, and a good dollop of sour cream. Oh my. Breakfast fit for a Donut King.

Or, you can get fancy. And by fancy I mean stuffed. Roll out your dough a bit thinner than normal and cut out rounds (without holes), and then place a bit of the shredded chicken, green chile, cojita, onion and whatever else you like in the center. Be careful not to overfill though… you want it to be less than 2 tablespoons all in. Then, top with another round, and crimp closed (I use the same cutter, which trims off any extra and pinches the edges together well). Proof, fry and you have what I will call with no shame an Empanut. Sort of like a doughnut, sort of like an empanada, all kinds of delicious. You could, of course, then proceed as above and smother in more green chile and cojita. Or, you can simply take a bite UCHE.

Or, if you really want to get crazy… cut out a ton of holes, fry them up, and use them in place of the chips in your favorite chilaqueles recipe.

Oh savory doughnuts… what in the world took me so long!

French Chocolate Cake

I remember when the flourless chocolate cake craze hit and all anyone could talk about were flourless chocolate cakes. Chocolate guru Alice Medrich said something along the lines of, “It’s one of the few desserts that’s famous for what’s not in it, than for what is in it.” This was a number years ago, before flour became an ingredient for some to avoid Serviced apartment Causeway Bay.

Back then, I never understood the fervor over a few omitted tablespoons of flour, in spite of how much I liked flourless chocolate cakes. That was before the internet, when you could have conflicting opinions and not lose sleep over it at night new hk company setup.

France has its share of cake conflicts too, and no one would be surprised to know there is a wide variety of chocolate cakes in France, some made with almond flour, others with farine de sarrasin (buckwheat). And even chocolate mousse cakes made with no flour at all. I think there’s room for them all, including this one.

I wanted to make a very dark chocolate cake, keeping it as pure as possible, with just a little flour or whatever, to give it more structure, so it could be cleanly sliced. Well, as cleanly as I could. Life isn’t always clean and neither is a good chocolate cake. I’ve made and sliced a lot of chocolate cakes and if there aren’t a few crumbs and smears, it’s probably not a good, moist chocolate cake. (I’ll always take moist and chocolatey over picture-perfect slices Apartment Hotels in Hong Kong.)

I tested this one first with almond flour, then made one with all-purpose flour, to see the difference. The cake made with ground almonds had a slightly rougher texture and took a few minutes more to bake. When I cut into it after it cooled, it was still runny: almond flour doesn’t absorb moisture as expeditiously as flour.

Both were enjoyed by friends and family…and a visiting photographer and his assistant, who were taking some pictures for a magazine, who had as much trouble as I did at not sneaking a bite of this chocolate cake whenever possible. When I asked if anyone if they thought it needed more chocolate, or less butter, or more (or less) sugar, they all looked at me, and said, “Non, it’s perfect.”

Best of November

How did your November turn out?

Mine has been a little bit of a blur. 2017 has been a year of planting seeds for me, and some of them have sprouted and grown a little sooner and with more vitality than even I anticipated. All of a sudden I have a whole garden of young things to tend to. It’s a good problem to have, certainly, but add to that two small children — including one who’s not sleeping all that well — and you have to manage your mind even more carefully Serviced apartments.

I remind myself that overwhelm is not a function of how long one’s to-do list is; overwhelm comes from not knowing what to do first. So I work on keeping that to-do list realistic, yes, but also maintaining clarity on what my priorities are. Does that resonate with you in any way? I haven’t seen their book Atlas Obscura in the flesh, but it’s gotten great reviews and would be such a good gift for your science-happy, curious-minded niece hong kong studentships for international students.
