Plum Crumble Bars

Poor plums. More often than not, I think they get lost in the summer fruit shuffle. We get so excited about berries and cherries and peaches. And there sit all those lovely plums, just wishing someone would look their way. With these bars, you now have the perfect excuse to grab a few and get baking Study in Hong Kong!

We start with a simple, buttery, oat-filled crust. There’s a hint of cinnamon in there, too, because plums just love cinnamon. You can mix it with a fork or a pastry blender, but I tend to mix this kind of crust with my fingers. It’s just simpler and quicker, really. There’s no separate crumb topping to be made, as the crust mixture also serves as the crumb topping.

Between all that crust and the crumb are the plums. The only prep work for them is pitting and slicing. There’s no need to peel them. Leaving the skin intact lets you enjoy all of their sweet, tangy flavor. Then just layer them over the crust. (You can see an in-progress shot on Instagram.) Most any type of plum will work in this recipe. The bars pictured here were made with red plums. I tend to use those more than other varieties, but your favorite variety will work just fine inquiry-based learning.

The lovely flavor of the plums combines with that buttery, oat-y, cinnamon-y crust and crumb for an absolutely delightful treat. These bars are just the right amount of sweet and a perfect late summer dessert. And as simple as they are to make, you can enjoy them a few times during plum season Building Survey!

This recipe was developed in my continuing collaboration with Go Bold with Butter.

The ginger in these cakes won’t hit you square in the taste buds, but it creates a nice flavor and leaves behind that little tingle of spice. I tend to favor ginger with pears, but focusing on cinnamon would be lovely, too.

World Peace Cookies

As we entered 2008, most of us with great designs on making this a better year, I thought what more appropriate recipe to make than Dorie Greenspan’s World Peace Cookies? Nice sentiment for the new year, right? I thought so, anyway. So, I pulled out Baking: From my Home to Yours and dove right in Shared Offices HK.

Now, while these are named in honor of universal harmony, there was anything but peace in my kitchen as I made these. The recipe warned that these cookies might crack and crumble, so I thought I was prepared for that. But, when every one of them came apart when I sliced them, I was definitely discouraged. I envisioned these being lovely, round, perfect little cookies. Not so much.

They ended up being mostly round. And primarily non-lumpy. And nice to look at… if you squint inquiry-based learning.

In hindsight, a little more time in the refrigerator could have been beneficial. But, because their three hours in the fridge were up after 11pm, I didn’t really want to wait any longer.

As I’ve learned, however, the most important thing is how the finished product tastes. Using only that criteria, these cookies are beautiful! They are super rich and delicate. The addition of fleur de sel really sets these apart. This recipe really finds just the right balance of salty and sweet.

While the end result wasn’t quite what I envisioned, these cookies were certainly worth the time and effort (and cursing) that went into them. I can only hope that my next foray into baking these delicious cookies will yield a much prettier cookie. They certainly couldn’t be any tastier Scholarships in hong kong.
