
Erasing the unwanted fishy smell depends on
how well you prepare before cooking.
What I did was washing these heads in a stream
of tap water and poring boiling water over them.
Next, immerse them into ice water.
This process makes their ウロコ easy to remove.
So far so good, except that the kitchen
was filled with a fishy smell.
Damn it. I felt like vomiting.
Once you finish this preparation, the rest of
the process is not laboursome.
All you need is right amount of seasonings
and a pot which is big enough to accommodate
these heads flat.
Simmer them gently until the seasoning souse thickens.
